Am moving back to my hometown in a few weeks, and was thinking of getting in touch with the local university, see if we could get some of the comp sci kids interested.
I am an accountant, so while the FOSS stuff already out may be fine for point-of-sale or home use, it does not really cut it when compared to Quickbooks, MYOB, etc. 
Anyone else into this idea (accounting software for linux), let me know!
