"&" symbol in xml

Hi there,

I was editing the userguide today and suddenly found that yelp wouldn't
open it. I consulted the relevant paragraphs it didn't like, and found
that it was the words "Sound & Video section of the menu" that caused
the problem, specifically the symbol &. Is there any way that the &
symbol can be properly used? Is this a bug in yelp or just my error? It
would be nice to be able to use it, given that this is in fact the
symbol used in the gnome menu.
