What style for graphical sequences (eg, 'System > Administration > Services')?

Hi folks,

I've recently switched to Ubuntu and have been making a bit of an appearance
on the wiki. I have a few years experience as a technical journalist
specializing in Linux and find the Ubuntu wiki a whole lot easier to
contribute to than the 'learn an xml dialect and we'll review and publish if
we have time' approach the distro I came from uses.

I'm having trouble finding a standard for graphical squences in the Style
guide. There's obviously standards for code, but alas nothing for the
simpler stuff.

So..

1. Is it:
System > Administration > Services
System -> Administration -> Services
or
System --> Administration --> Services?

2. Shouldn't this be documented somewhere?
