For the music/video, if you have proprietary formats (.mp3, avi, etc),
you will need to install the 'ubuntu-restricted-extras' package from
the Ubuntu Software Center.  The reason for this is, that Ubuntu's
policy does not allow it to provide these proprietary codecs (and
other packages like Java runtime, Flash plugins) to be included in the
install.

And yes, the version of Ubuntu will be either 9.04 or 9.10.  Please
correct the version, so that others will be able to help you better.

I've never used Evolution, so I'd rather not try helping you with
that, lest I send you off in the wrong direction. :)
