Add application launcher to Applications menu

Hi, all:

Making my foray into .deb packages (which proved to be worlds easier
for me than RPM), and I'm left with one question. I'd like to add an
item to the Applications/Graphics menu in Edubuntu 7.10, but I have
struck out so far. Can anyone point me toward a readme or doc that
will explain this step?
