Yes, the system-packages-doc interface is connected for me for chromium
and firefox.

Yes, it would be helpful to get access to /usr/share/gtk-doc/
Some GNOME stuff has switched to gi-docgen which uses standard /usr/share/doc/ instead, but that migration is going to be a slow, manual process.
