I've ran an internet cafe before (own) with desktops all running on Ubuntu.
Yep, I got the cams to run, chat available, and browsing no sweat. However,
for a business, these are what I've found out through experience:

1. customers will hesitate to use an unfamiliar desktop.
2. even if there's an office suite, they will insist on using MS Office.
3. more than 70% of my cafe users are gamers with 95% of those gamers are
using online games.

I've supplanted first person shooters with opensource counterparts. Yet,
users hesitate to use them. Even had competitions using those games, but in
the long run, no dice.

But if you have not much gaming then go for it. Thing to note -- customers
will insist what they want -- they are paying customers after all.
