All looks sane with one question.
The use of snap_channel. Does it assume that each snap listed to install will need to be in the stable/ubuntu-18.04 (for bionic) channel or are we relying on the behaviour of the snap install to fallback to stable if the branch does not exist [1]?

For example, if you tell users to install your snap with the following command snap install my-app --channel=beta/fix-for-bug123, after 30 days, the branch will close and these users will be moved to the beta channel, as if they had used snap install my-app --channel=beta.
