I've tried again by removing completely the mysql-server and mysql-server-core packages.
Next try leaved me see the following at console :
ERROR: 1146 Table "mysql.user" doesn't exist

I think the order of processing packages and their scripts is absolutely
relevant, maybe server expected for a core which wasn't really
established.
