gnuCash is quite cool.. saves tons of time when I'm doing my personal accounts.
Tomboy Notes, just because I have a memory like a sieve for small details (I have to have a written todo-list pad on my desk at work).
Playing with GIMP is also good.. you don't quite realise how powerful it can be till you start playing (Layers > Colours ... is very useful...)
