I see no reason not to just use the default ext3. Other filesystems
_may_ yield better performance on a very busy system, but for _most_
users ext3 is a good balance of performance, stability and reliability.

You can't change the filesystem type just by editing /etc/fstab. The
filesystem needs to be formatted in one way or another, then fstab is
populated based on what the type is.
