Any reason why you want to remove it?

I'm sure I have removed Evolution before but I believe it removes 
ubuntu-desktop too (which is the meta package for the desktop) although 
I can't remember exactly how I did it and I haven't got a machine I can 
try it on at the moment.  AFAIK it isn't a bug.
