If you haven't tried it - Mylar plugin for eclipse does an awesome job of
this.

All I do all day everyday is write code, with occasional pauses to eat,
sleep and play punk rock.

I am very knowledgeable in Python (which we should use if we're homebrewing
an app for Ubuntu for several reasons)
but also know just about every other language in use and know my way around
foss db's.

What I'd suggest as an alternative to doing a desktop app start to finish,
which is a long and arduous process, especially with people who would just
be getting their feet wet on a major project - we work on making
improvements to an existing project, and package it up nicely for the
community.

I've been looking at doing some work on this for a while:

and getting it seperated from the evolution backend, and having some options
for using different backends.
For example, I use Thunderbird and would like to use its address book with
launchbox.

What do you all think?
