This is an easy fix. Gnome & Unity depends on evolution-data-server so
please re-install ubuntu-desktop (which will also re-install the stuff
you removed). Next time, pay a little more attention to what other
programs are being uninstalled when you mark something for
uninstalling.

I don't recommend you try to cut out programs from Ubuntu; they're
generally there for a good reason & the default Ubuntu install doesn't
take up much hard drive space. You might be able to remove evolution
(but keep evolution-data-server and evolution-data-server-common) but
I've not tried this as I have no reason to.
