Of course, it helps if you know something about the buyer ahead of
time, and how they will be using it. Without that though, the biggest
decision will be whether you want to put non-free components on or
not. If yes, you'll want to get all of ubuntu-restricted-extras
(should include java, flashplugin-nonfree, and lots of multimedia
codecs), and see which driver your video card works best with. If you
know that compiz works, turn on a few of the cool but not in-your-face
things. Consider also whether you always install a particular
application on a fresh install (eg. Deluge, irssi, Epiphany, KompoZer,
Revelation, nfs-kernel-server, gcash, etc.).

It appears that OEM installation has been somehow integrated into
Ubiquity, the normal desktop installer.
