[Ubuntu PA] Server GUI

Just installed Ubuntu Server on an old server.  Want to administer it with a 
VNC GUI.  Looking at stuff I know and suggestions I've gotten, it doesn't 
look like stuff other than Gnome and KDE have much in the way of 
administrative tools.

I don't want to install the whole ubuntu-desktop because I don't want all the 
user apps.  Is there a server oriented meta package that just installs gnome 
(or KDE) without OpenOffice, etc.?
