Yes, Samba will work without a Windows computer.  This is what
Ubuntu's GUI sharing utilities use underneath.

While it has the config GUIs, Samba is a woefully inefficient
protocol, so I don't use it myself.  Most of the time I just use SSH,
with Nautilus' "Connect to Server" GVFS connections.  That's about as
easy to set up as it can get - install ssh.  I've also tinkered with
NFS, which works well too.
