The proper way is to reconfigure it:
sudo dpkg-reconfigure xserver-xfree86
Another way is to just edit it by hand but then you'll be stuck having to edit by
hand from that point on, whenever you upgrade that package. If you're an
experienced *nix user this isn't a big deal but if you aren't then you'd be better
off using the proper tool IMHO.
