Steve,
Welcome, fellow Linux newb! I too have been using Windows since 3.11 and 
am quite 'stuck' in my ways. I find Ubuntu very interesting and yet I 
struggle because I simply do not know what commands to use in certain 
situations (what do you mean there is no CTRL+ALT+DEL to end broken 
programs!).

I've joined the DocumentationTeam, simply to edit the Wiki for spelling, 
grammar, formatting, etc. This little bit I feel I can do, and 
contribute to a greater whole.

To attempt to answer one of your questions, the DocTeam is currently 
working on several 'learning' docs for Ubuntu and Linux.
