It definitely can be used as a server. I'm doing that myself.

IMHO, editing the config files IS the easiest way to do it - and it
doesn't require you to worry about whether all the functionality you
want is built into a GUI. I didn't leave my opinion in my last email
to be argumentative either. I simply stated that while we don't have a
GUI for that now, it's being considered for a future version of
Ubuntu. You can find more info if you search the list archives.
There's probably some info about it on the Ubuntu website as well on
the pages that list the features and fixes that are goals for future
releases.
