My method for getting this to work under Virtual PC 2004.

After you boot, grub comes up with a 2 second menu display. Hit ESC to
enter the menu, and choose recovery mode. When you get to the command
line, type in the following:
nano -w /etc/X11/XF86Config-4

If you like other editors, use the one of your choice. I've found nano
to be more intuitive for those that like GUIs.Hit the down key, or
page down, a bunch until you find the "Screen" section. For those that
don't edit files by hand very often, it the section with a whole bunch
of "1024x768" "800x600" "640x480" lines.

Near the begining of that section, below the "Default Monitor" value,
is a DefaultDepth variable. Change the 24 to 16. Now, hit CTRL+X to
exit, hitting 'Y' to save then [ENTER] to save to the same filename.
Go ahead and type in 'reboot' to restart your system.

Should now load up into the GUI fine.
