In short: each window pops up in the location you left it at previously
(i.e., each window remember its position).
Nautilus is very well explained in the help (System -> Help -> Desktop
-> User Guide -> Nautilus File Manager)

It depends on what you are used to. Windows users will find it
unfamiliar, users coming from MacOS (before MacOS X) will find it
familiar and logical. There are arguable advantages to both models

Settings yes, hidden no:
In any folder window, go to the Edit menu -> preferences -> Behavior ->
always open in browser windows
If you want the browser behavior, but not by default, but for an
individual folder, you can rightclick it and select "Browse Folder".
If you want to jost open a nautilus window in browser mode, go to the
Applications menu on the panel -> System Tools -> File browser.
(rightclick it to add it to the panel)
