are you using vnc to send the whole screen across the network or just the application with ssh?
i do
sam at headed-machine:~$ ssh -CX headless-machine-ip
<snipped login stuff>
sam at headless-machine:~$ rhythmbox
to play music on a headless machine that is pluged into my speakers. gdm is disabled on the headless machine. and rhythmbox displays on the headed machine. its fast enough over a wireless network.
