I didn't see an exact answer to your question, so here is my input.
1) You can always use SSH to log on and immediately type something like:
vncserver :3 (and later log on using VNC to ubuntu:3)
2) I have used the VNC config file with Fedora in the past to
automatically start up certain VNC sessions at boot time. The same
method did not seem to work with Ubuntu, and I haven't made time to
figure out how it should work in Ubuntu, but there should be some way.
