I'm not sure what the French menus say, but you can configure some
sound-related options in System/Preferences. You can also right-click
on the volume control in the panel and configure various levels. Is
that what you're looking for? Sorry to answer in English, but my
written French is appalling (worse than my spoken French, which is
saying something).
