If I uninstall "Ubuntu Gnome" Environment what do I lose?

Well if this is the case then you can go ahead and remove them all.
After that you can reinstall just the gtk apps you want to use, they
will grab just libraries such as gtk etc that they need and will not
install a full gnome environment. The other thing is that when you
remove the packages, do a remove rather than purge - this will leave
the debs on the system to install your specific packages again later -
saving another download for them. After you have wehat you want you
can clean up the leftover debs with a command that ive completely
forgotten now im trying to think of it. someone will tell you.
