how do you network two Ubuntu computers with a crossover cable?

Here's another option.
For instances where you just want to transfer or retrieve some files
and don't need transparent access like samba or nfs provides, SSH is a
great option. I personally install it on all my systems. The gnome
ftp client (gnome-ftp?) is ssh capable, if you want a graphical
interface.
Here's a great article to get you started:

There also is sshfs which gives you NFS-like transparency over an SSH
tunnel. I messed with it for about ten minutes the other day but
wasn't able to get it to work.
