Upgrading

I wouldn't expect the server version to come with anything for the
desktop as desktop stuff is quite bulky (think X).

A desktop install actually includes a base server install.

I tend to dist-upgrade my servers as once I've set them up I don't
change them very much, I need the continuity of service and there
are usually many fewer packages involved.

I'm more inclined to do a fresh install with a desktop especially if
I've been fiddling around with them a lot and accumulated a load of
'crud'.  But I've had a lot of success with dist-upgrade on desktops,
too.

I would get the desktop version as that will require much less
downloading for the server bits that aren't included.
