Maxima is under Mathematics in the universe repository.  The easiest way
to find it is by using the search function.

If it doesn't show up is because you don't have the repository, you
didn't reload them after setting the new repositories, or it doesn't
really exist in the stable Ubuntu version (I'm using Hoary and it
appears there).

BTW, I always use the search function.
