There are packages in Ubuntu for several Wikis. You'll need a web server
(e.g. Apache2) as well.

I've installed MoinMoin a few times and the documentation included in
the Ubuntu packages is quite easy to follow.

Hoary has a slightly old version of MoinMoin (it's updated in Breezy).
If you want a newer version there is one on my APT repo (see my home
page below).
