Put very simply, repositories are collections of programs compiled
packaged up and ready to use for Ubuuntu.  No need to compile or
configure, they just install. Just much easier than  getting tarballs,
unzipping, finding the configure and make scripts, working out the
distribution specific stuff like startup scripts and where they live etc
etc.

Debian systems (and Ubunutu is one from this point of view) are famous
for an excellent set of tools and methods for packaging files (in .deb
files), storing them in repositories that are accessible either from
your original install disc (usually there is a copy of the repository
made onto your machine at installation) or over the internet.

Ubuntu has some very active teams building repositories, nearly
everything most users could want is available 'ready to roll'.

There are various tools available to access the repositories;  I'd
suggest starting with Add Applications, which is a gui under
System->Administration->Add Applications.  This allows you to add common
programs automatically.  If you click the 'Advanced' option, you can do
removals and addition of a wider range of programs in a tool called
Synaptic.
