If you search for cvs gui's there are plenty out there:

The difficult part is installing the server. If your going to keep the
server on the same machine it's simpler. Have a poke around at the doco on:
http://www.nongnu.org/cvs/
looking for server installation and setup.
It's been a long time since I set up a server, since once it's up and
running, you'll most likely never have to touch it again. ;)
Until you've got cvs up and running, and since it is a small project, I
would recommend just using tar to make a backup every night and after every
milestone is reached. Just give the backups descriptive names.
