sudo apt-get remove ubuntu-desktop will not remove gnome. you can try
sudo aptitude remove ubuntu-desktop but not real sure if it was
installed with aptitude. i would try sudo aptitude remove gnome-base im
pretty sure thats the package name. or open synaptic and remove all
gnome apps. Ubuntu-desktop is a meta package and can be removed safely
without disturbing gnome but should be re-installed for upgrade from
ubuntu version to ubuntu version. there might be a lib you can remove to
get most of the meta package out like for kubuntu-desktop removing
libqt3-mt will get rid of most of the apps and kubuntu-desktop kde blah.
