Since you want to add stuff the easiest way to get some space on the liveCD is
to remove the windows programs that they included, these are in the
extracted_cd/programs directory.
An easy way to customize the menus/desktop/background is mentioned in the Howto,
you start the liveCD, make your changes, and then you create a tar.gz archive
file of the home directory. Then when you go to customize the livecd you can
include these files in /etc/skel for example so that when users are created in
the livecd they automatically get these changes. Just one way to do it.
