for a whole system there is, as far as i know, nothing like an un-install.
your route goes with partitioning. either you use a rescue-disk or some of
the live-cd's which come with a partitioning program, or you probably have
a partitioning program on windows.

with this program you try first to make the ubuntu partition(s) smaller.
hopfully this helps already your needs for space. in this way you would
not have to delete Ubuntu. if not, you can delete the linux partition and
make a new partition out of that space (with a FAT or NTFS file system).
and if desired, you also can merge that free space with the windows
partition. an the other hand you also could use this new (FAT p partition
as a second primary partition (FAT or NTFS) which will be detected by
windows easily.
