That's REALLY weird... as I understand it, the only difference between
Ubuntu and Xubuntu and Kutuntu is the X environment...  I wonder... does
the command-line `cp` cause the problem, too?

I don't use Gnome, so I can't give you any direction there, but perhaps
it's just Gnome's Nautilus file manager taking up all the resources...
