Printer instances in Ubuntu?

I had some previous experience with Knoppix, where I was able to get 
two-sided printing and easy use of draft mode by creating printer 
instances with the appropriate settings.  I'd like to do the same for 
Ubuntu, which I'm really enjoying so far.

I've struck out Googling for documentation on this.  Anyone have any 
good words?
