I believe you want to do an 'apt-get install ubuntu-desktop'

Once it is complete, log out. On the login screen somewhere is a menu 
option named 'Sessions'. Select it, and you should see Gnome in the list 
of desktop environments. Select it and you'll be running Gnome/Ubuntu.

As a note of caution, I have tried this before on a few occasions and my 
system was never as stable as when I did a proper Ubuntu install. Your 
mileage may vary....
