Turning video_ts filesystem to avi.

I ripped a DVD using dvdbackup -m and it created a directory with
VIDEO_TS in it cntaining a copy of the DVD.  I cant burn it onto a DVD
as it is too big.  How can I turn the film into a xvid avi so I can
copy this onto a DVD?
