SoundJuicer to rip cd to flac (although apparently you can install 
packages in Ubuntu to let juicer rip to mp3)

command line flac to mp3?

Audacity to work with / add to edit etc audio tracks.

MP3 player will come up as storage device so you can copy done tracks 
directly to it.
