setting maildir directory in evolution

Hullo there.

Bad form to reply to my own message I know, but I had a brainwave and
appear to have solved my problem:

The file I edited was of course ~/.gconf/.../%gconf.xml. It occurred to
me that maybe evolution loads it at startup, then writes it when it
terminates, ignoring it in the meantime, except of course when the
config is changed via evolution itself.

So I took my system into single-user mode, edited the file to set my
desired maildir-format directory, and brought it back up into X. Lo and
behold, the maildir directory is now set.

So that's the workaround. There are probably simpler ways to make sure
no part of evolution is running, but going into single-user mode is sort
of guaranteed...
