set vlc as default

If you mean "set vlc as default when clicking files in the nautilus file
manager", then yes, you can do it like this:

- right click file
- go to "Properties" at the bottom of the resulting menu
- set vlc in the "Open With" tab

Any file with that mime type will now open with vlc, provided of course
that vlc can handle that type . ( for instance .ogg, .mp3, .m3u  etc )

You can of course do this with other apps as well - for example you can
set your favourite editor to open text files etc. 

If the app you want is not in the list, you can add a custom command, and
select that when it appears in the list.
