Hi Dave,

Via Startup: Select the Recovery Mode boot option from the Grub menu.
You can prevent gdm starting up in the regular boot with:
    sudo update-rc.d -f gdm remove

Via X session: ctrl-alt-F1 (to F6).  ctrl-alt-F7 gets you back to X.

Ubuntu (and Debian) doesn't make any distinction between runlevels 2 to 5.
