Here is how to find it:

1) Click on Advanced Topics on the help home page
2) Click on Installing Server Applications
3) Scroll down and click on number 10: "Email Services"

Another approach would be to type the following in Google:

site:help.ubuntu.com email server


https://help.ubuntu.com/6.06/ubuntu/serverguide/C/email-services.html

Was the first non-advertising hit, here, from that search. I imagine the
material is quite similar regardless of Ubuntu version. There are several
other hits that you might find relevant
