Have you tried:
<mailto:ubuntu-users-request at lists.ubuntu.com?subject=unsubscribe>

Or just compose a new email with the subject "unsubscribe" (without the
quotes) and a blank body and mail it to
ubuntu-users-request at lists.ubuntu.com

Make sure you are sending from the same address you subscribed as.
e.g. if you subscribed using "bob at example.com" don't send your email as
"bob at mail.example.com".
