how to install ubuntu to a box without display monitor?

Yeah,

I was sitting here thinking similar.  The only way otherwise is you've got
to get ghost or some opensource equivalent, and image an installation then
do a an "over-the-network" image.  I'm guessing you don't want to go that
route.  Best bet is to borrow a monitor and finish the base install.  Then
enable the remote desktop feature and finish building it from there.
