Well, you could uninstall it - it's only an aptitude install away if
you decide to reinstall it....
I suppose most people would just disable it starting though.   Sorry,
not in front of an ubuntu machine at the second,
but I believe the easiest way to that is first install sysv-rc-conf,
and use it's curses style interface to disable gdm.

Logging out is the same as usual,  You just end up at a command prompt
rather then the gdm login screen.
