Thanks for reminding me about swik.net. I have never got in the habit of
using it, but it is really quite handy for things like this.

What has just occurred to me after reading one of the articles there is
that the simplest way to go, if I still wanted to do this, would be to
run the voip software as a jack client using one the oss or alsa
wrappers for jack. I'm pretty sure this is possible. There may even
already be a voip client which is jack compatible. Then recording the
audio streams would be very easy.
