Yes, it's all a bit confusing at first :)
Evolution sort of "comes with" GNOME, which is the default graphical
interface for Ubuntu, but also many other "distributions" of Linux.
Evolution can be used with other Desktop Environments though, so it
isn't strictly a "GNOME only" email client. Similarly, Kmail sort of
"comes with" KDE, which is the default Desktop for "Kubuntu", but can
also be used with other desktops...
If you want to be thoroughly confused, have a look at

Most of the graphical "environments" shown on that site are actually
"window managers", which are not full "Desktop Environments" in the
same sense as GNOME or KDE - GNOME and KDE for example have their own
underlying window managers ( metacity for GNOME, by default, and kwin
for KDE).
So, for example GNOME is built on top of the metacity window manager,
but can use other window managers - like compiz...
