Take my word for it - just leave it in place - particularly if you are
new to Ubuntu.
Remove the icon from your panel and the item from your menus if they
bother you. If your hard disk space is extreemly limited then I'd
suggest reinstalling with xubuntu. You will encounter more problems than
it is worth by trying to uninstall Evolution without prior experience
with Ubuntu. Searching the archives and google
(http://www.google.com/search?complete=0&hl=en&q=ubuntu+%2Buninstall+evolution)
will show you some of the issues.
